Hickory Smoked Ribs

Hickory Smoked Ribs
Prep Time: 10 Minutes
Cook Time: 2 Hours 45 Minutes
Ingredients
1 1/2 Cup Paprika
3/4 Cup Brown Sugar
4 Tbsp Coriander
6 Tbsp Salt
4 Tbsp Onion Powder
4 Tbsp Coarse Black Pepper
2 Tbsp Oregano
4 Slabs Beef Short Ribs
Instructions
Combine all ingredients (except the short ribs) into a bowl
Rinse and dry ribs, remove the membrane from the underside, and trim the excess fat
Liberally season with the rub, then cover and refrigerate for at least 8 hours
Pre-heat the grill to 250 using a combination of our seasoned hickory wood and charcoal; use indirect heat and cook with the cover closed
Place ribs, meatier side down, on the grill away from the coals
Cook for 2 hours adding more hickory wood and coals when needed
Turn the ribs and cook for 45 more minutes
Sprinkle extra dry rub on after cooking and enjoy!
