Skillet Steak Skewers

Prep Time: 15 Minutes

Cook Time: 15-30 Minutes


Ingredients

Campfire Grill & Skillet

8 Metal Skewers

Basting Brush

2lbs Beef Sirloin (1 Inch Pieces)

2 Cups Mushrooms

2 Bell Peppers (1 Inch Pieces)

2 Red Onions (1 Inch Pieces)

1 Stick Butter

2 Tbsp Garlic

2 Tbsp Parsley

Salt & Pepper

Instructions

Alternate steak, bell pepper, mushroom, and onion pieces on the skewers

Brush the kebabs with oil and season with salt & pepper

Place the kebabs on the grill and cook 4-5 minutes per side

Place a cast iron skillet on the grill and melt the butter

Sautée garlic in the butter for 1 minute

Remove the pan from over the campfire, add parsley and more salt & pepper

Brush the garlic butter over the skewers and serve!

Prep Time: 20 Minutes

Cook Time: 1 Hour 5 Minutes


Ingredients

Apple Filling:

Campfire Grill & Cast Iron Skillet

10-12 Honey Crisp Apples (Peeled, Cored, Sliced)

2 Tbsp Vanilla

4 Tbsp Brown Sugar

4 Tbsp Cinnamon

4 Tbsp Cornstarch

1/2 Cup Lemon Juice

4 Tbsp Salted Butter

Crumble Topping:

1/2 Cup Brown Sugar

1/2 Tbsp Cinnamon Sugar

3/4 Cup Flour

1/2 Tbsp Nutmeg

1 Stick Salted Butter

Instructions

Let the fire sit for 30 minutes

Mix the sugars, flour, and nutmeg together for the topping

Cut the butter into small pieces

Using a fork, work it into the topping mix

Heat butter in cast iron skillet

Add the salt and apples; cook them until they start to get soft

Stir in the rest of the filling ingredients

Add the crumb mixture to the top of the apples and cover with tin foil

Cook for 20-30 minutes, and enjoy!

Prep Time: 10 Minutes

Cook Time: 2 Hours 45 Minutes


Ingredients

1 1/2 Cup Paprika

3/4 Cup Brown Sugar

4 Tbsp Coriander

6 Tbsp Salt

4 Tbsp Onion Powder

4 Tbsp Coarse Black Pepper

2 Tbsp Oregano

4 Slabs Beef Short Ribs

Instructions

Combine all ingredients (except the short ribs) into a bowl

Rinse and dry ribs, remove the membrane from the underside, and trim the excess fat

Liberally season with the rub, then cover and refrigerate for at least 8 hours

Pre-heat the grill to 250 using a combination of our seasoned hickory wood and charcoal; use indirect heat and cook with the cover closed

Place ribs, meatier side down, on the grill away from the coals

Cook for 2 hours adding more hickory wood and coals when needed

Turn the ribs and cook for 45 more minutes

Sprinkle extra dry rub on after cooking and enjoy!

Ingredients

Campfire Grill

Toothpicks

Basting Brush

24 Scallops

24 Bacon Strips

24 Pineapple Cubes

3/4 Cup Maple Syrup

1/4 Cup Brown Sugar

Instructions

Let the fire sit for 30 minutes so the flames are burning hot and strong

Whisk the maple syrup and brown sugar together for the glaze, then set aside

Lay a strip of bacon out, wrap a scallop and pineapple chunk in it

Wet a toothpick, and pin it all together

Brush glaze over the scallops

Cook the scallops for 15-20 minutes, and enjoy!

Ingredients

Campfire Grill

4 Russet Potatoes

1 Package Chicken Breast

Salt & Pepper

Tin Foil

1 Stick Salted Butter

Instructions

Clean and wash potatoes

Poke holes with a fork around the potatoes

Wrap in tin foil

Cook for 20 minutes

Season each chicken breast

Wrap in tin foil individually with 2 tbs of butter each, making sure the tin foil is not ripped (this prevents moisture from escaping)

Cook for 15 minutes, flip, and cook another 15 minutes

Wood-Fired Brick Oven Pizza

Cook Time: 10 Minutes


Ingredients

Brick Oven

2 Large Bowls

1 1/3 Cups Warm Water

3 3/4 Cups All Purpose Flour

1 1/4 Ounce Active Dry Yeast

1 Tbsp Sugar

3 Tbsp Extra-Virgin Olive Oil

1 1/2 Tsp Salt

2 Tbsp Minced Garlic

1 1/2 Tsp Onion Powder

4 Tbsp Parsley Flakes

Instructions

Whisk 1 1/3 cups of warm water and sugar in a bowl, sprinkle yeast on top of the mixture

Set the mixture aside for 10 minutes until the mixture is foamy

Add olive oil to the mixture; pat the garlic dry and stir it in as well

Whisk together the flour, salt, onion powder, and parsley

Make a ditch in the middle of this mixture, and add the first mixture;  gradually stir it with a wooden spoon

After the dough is mixed thoroughly, lay it out on a lightly floured surface

Kneed the dough for 5 minutes, adding more flour if needed until smooth and elastic

Form the dough into two balls

Brush the two large bowls with olive oil, and place a dough ball in each

Turn and coat the balls of dough with olive oil, then cover the bowls tightly with plastic wrap

Let sit at room temperature for 1 hour and 30 minutes until the dough doubles in size

Roll out the dough to desired shape, and top it with desired sauce, cheese and toppings

Cook for 10 minutes, until the crust starts to brown

Store any dough you do not use in plastic wrap and place it in the freezer; it will last for up to a month!
